The heavy rain that fell in the autumn of 2002 and again in January 2003 was a stark contrast to the higher then average temperatures in March. The climatic conditions in May were extremely beneficial to the flowering and berry set that gave signs to 2003 being a large harvest. The summer was hot and dry which led to the production of musts with extremely low levels of acidity and high sugar levels. It was a year at Quinta de Roriz where we felt that there was a large time difference between the polyphenolic maturation and the technical maturation. Manual picking of the grapes started on the 23rd September and finished on the 29 September.

Provided exclusively by Quinta de Roriz from carefully analysed and prepared plots of vineyard. Mostly from the younger vines, 5-10 years old.

Vinification
The selected grapes were vinified at Quinta do Sol where the Symington family have their modern vinification centre; rigorous grape selection by hand on selection tables ('triage'); inoculation with selected yeast; fermentation in stainless steel tanks (20,000 lts), maceration by pumping over with temperature controlled at 25-26ºC.
Ageing
9 months in 2 year French oak casks with a capacity of 400 and 350 lts.
Coopers - Tonnellerie Taransaud, Tonnellerie Demptos.
Fining
Fining with egg white.
